Question 1013: Does boiling raisins and dried grapes make them forbidden (haram)?

1 عَنْ عَلِيِّ بْنِ جَعْفَرٍ عَنْ أَخِيهِ مُوسَى أَبِي الْحَسَنِ قَالَ: سَأَلْتُهُ عَنِ الزَّبِيبِ هَلْ يَصْلُحُ أَنْ يُطْبَخَ حَتَّى يَخْرُجَ طَعْمُهُ ثُمَّ يُؤْخَذَ ذلک الْمَاءُ فَيُطْبَخَ حَتَّى يَذْهَبَ ثُلُثَاهُ وَ يَبْقَى ثُلُثُهُ ثُمَّ يُرْفَعَ فَيُشْرَبَ مِنْهُ السَّنَةَ فَقَالَ لَا بَأْسَ بِهِ.

Ali ibn Ja'far said: 'I asked Musa ibn Ja'far (peace be upon him) about dried grapes (raisins), whether it is permissible to cook them until their flavor comes out, and then to take that water and cook it until two-thirds of it evaporates and one-third remains, and then to take it and drink from it for a year?' The Imam said: 'There is no problem!'
2 عَنْ عَمَّارٍ عَنْ أَبِي عَبْدِ اللَّه قَالَ: سُئِلَ عَنِ الزَّبِيبِ كَيْفَ يَحِلُّ طَبْخُهُ حَتَّى يُشْرَبَ حَلَالًا قَالَ تَأْخُذُ رُبُعاً مِنْ زَبِيبٍ فَتُنَقِّيهِ ثُمَّ تَطْرَحُ عَلَيْهِ اثْنَيْ عَشَرَ رِطْلًا مِنْ مَاءٍ ثُمَّ تُنْقِعُهُ لَيْلَةً فَإِذَا كَانَ مِنْ غَدٍ نَزَعْتَ سُلَافَتَهُ ثُمَّ تَصُبُّ عَلَيْهِ مِنَ الْمَاءِ بِقَدْرِ مَا يَغْمُرُهُ ثُمَّ تُغْلِيهِ بِالنَّارِ غَلْيَةً ثُمَّ تَنْزِعُ مَاءَهُ فَتَصُبُّهُ عَلَى الماء الْأَوَّلِ ثُمَّ تَطْرَحُهُ فِي إِنَاءٍ وَاحِدٍ ثُمَّ تُوقِدُ تَحْتَهُ النَّارَ حَتَّى يَذْهَبَ ثُلُثَاهُ وَ يَبْقَى ثُلُثُهُ وَ تَحْتَهُ النَّارُ ثُمَّ تَأْخُذُ رِطْلَ عَسَلٍ فَتُغْلِيهِ بِالنَّارِ غَلْيَةً وَ تَنْزِعُ رَغْوَتَهُ ثُمَّ تَطْرَحُهُ عَلَى الْمَطْبُوخِ ثُمَّ اضْرِبْهُ حَتَّى يَخْتَلِطَ بِهِ وَ اطْرَحْ فِيهِ إِنْ شِئْتَ زَعْفَرَاناً وَ طَيِّبْهُ إِنْ شِئْتَ بِزَنْجَبِيلٍ قَلِيلٍ...

Imam Sadiq (peace be upon him) was asked about dried grapes (raisins), how their cooking is made lawful so that they can be drunk lawfully? He said: 'You take one-fourth of a ritl of dried grapes, clean it, and then pour 12 ritls of water on it and soak it for one night. The next day, you take its water and pour enough water on it to cover it, and you give it one boil with fire. Then you take its water and pour it on the first water, and you pour all of them into a vessel and light a fire under it. The fire should remain until two-thirds of it evaporates and one-third remains.'
Then you take one ritl of honey and give it one boil with fire and skim off its foam, and you pour it on the cooked dried grape water and stir it until it is mixed. If you wish, you can put saffron on it, and if you wish, you can perfume (flavor) it with a little ginger!
3 عَنْ إِسْمَاعِيلَ بْنِ الْفَضْلِ الْهَاشِمِيِّ قَالَ: شَكَوْتُ إِلَى أَبِي عَبْدِ اللَّهِ قَرَاقِرَ تُصِيبُنِي فِي مَعِدَتِي وَ قِلَّةَ اسْتِمْرَائِيَ الطَّعَامَ فَقَالَ لِي لِمَ لَا تَتَّخِذُ نَبِيذاً نَشْرَبُهُ نَحْنُ وَ هُوَ يُمْرِئُ الطَّعَامَ وَ يَذْهَبُ بِالْقَرَاقِرِ وَ الرِّيَاحِ مِنَ الْبَطْنِ قَالَ فَقُلْتُ لَهُ صِفْهُ لِي جُعِلْتُ فِدَاكَ قَالَ تَأْخُذُ صَاعاً مِنْ زَبِيبٍ فَتُنَقِّيهِ مِنْ حَبِّهِ وَ مَا فِيهِ ثُمَّ تَغْسِلُهُ بِالْمَاءِ غَسْلًا جَيِّداً ثُمَّ تُنْقِعُهُ فِي مِثْلِهِ مِنَ الْمَاءِ أَوْ مَا يَغْمُرُهُ ثُمَّ تَتْرُكُهُ فِي الشِّتَاءِ ثَلَاثَةَ أَيَّامٍ بِلَيَالِيهَا وَ فِي الصَّيْفِ يَوْماً وَ لَيْلَةً فَإِذَا أَتَى عَلَيْهِ ذَلِكَ الْقَدْرُ صَفَّيْتَهُ وَ أَخَذْتَ صَفْوَتَهُ وَ جَعَلْتَهُ فِي إِنَاءٍ وَ أَخَذْتَ مِقْدَارَهُ بِعُودٍ ثُمَّ طَبَخْتَهُ طَبْخاً رَفِيقاً حَتَّى يَذْهَبَ ثُلُثَاهُ وَ يَبْقَى ثُلُثُهُ ثُمَّ تَجْعَلُ عَلَيْهِ نِصْفَ رِطْلِ عَسَلٍ وَ تَأْخُذُ مِقْدَارَ الْعَسَلِ ثُمَّ تَطْبُخُهُ حَتَّى تَذْهَبَ الزِّيَادَةُ ثُمَّ تَأْخُذُ زَنْجَبِيلًا وَ خَوْلَنْجَانَ وَ دَارْصِينِيَّ وَ زَعْفَرَانَ وَ قَرَنْفُلًا وَ مَصْطَكَى وَ تَدُقُّهُ وَ تَجْعَلُهُ فِي خِرْقَةٍ رَقِيقَةٍ وَ تَطْرَحُهُ فِيهِ وَ تُغْلِيهِ مَعَهُ غَلْيَةً ثُمَّ تُنْزِلُهُ فَإِذَا بَرَدَ صَفَّيْتَهُ وَ أَخَذْتَ مِنْهُ عَلَى غَدَائِكَ وَ عَشَائِكَ قَالَ فَفَعَلْتُ فَذَهَبَ عَنِّي مَا كُنْتُ أَجِدُهُ وَ هُوَ شَرَابٌ طَيِّبٌ لَا يَتَغَيَّرُ إِذَا بَقِيَ إِنْ شَاءَ اللَّهُ.

Ismail said: 'I complained to Imam Sadiq (peace be upon him) about the sounds I heard in my stomach and the poor digestion of food.' The Imam said: 'Why don't you make the nabidh that we drink, which makes food digestible and removes sounds and gases from the stomach?'
He said: 'I said: 'May I be sacrificed for you! Describe it to me!'
He said: 'You take one sa' of dried grapes (raisins) and clean and purify it from its seeds and whatever is in it. Then you wash it well with water and soak it in water, a quantity equal to it or enough to cover it. In winter, you leave it for three days and nights, and in summer, for one day and night. When this time has passed, you take it and strain it, and you pour the strained liquid into a vessel and measure its quantity with a stick. You cook it with a mild heat until two-thirds of it evaporates and one-third remains. Then you add half a ritl of honey to it, take its measure, and cook it until the amount that has increased from adding the honey evaporates.'
Then you take ginger, galangal, cinnamon, saffron, cloves, and mastic and crush them, pour them into a thin cloth, and throw it in. You give it one boil along with them and then remove it from the fire. When it is cold, you strain it and drink from it after breakfast and dinner!'
Ismail said: 'I did this, and the problems I had went away from me, and this is a good drink that does not change if it remains. God willing.'
4 زَيْدٌ النَّرْسِيُّ فِي أَصْلِهِ، قَالَ: سُئِلَ أَبُو عَبْدِ اللَّهِ عَنِ الزَّبِيبِ يُدَقُّ وَ يُلْقَى فِي الْقِدْرِ ثُمَّ يُصَبُّ عَلَيْهِ الْمَاءُ وَ يُوقَدُ تَحْتَهُ فَقَالَ لَا تَأْكُلْهُ حَتَّى يَذْهَبَ الثُّلُثَانِ وَ يَبْقَى الثُّلُثُ فَإِنَّ النَّارَ قَدْ أَصَابَتْهُ قُلْتُ فَالزَّبِيبُ كَمَا هُوَ [يُلْقَى] فِي الْقِدْرِ وَ يُصَبُّ عَلَيْهِ الْمَاءُ ثُمَّ يُطْبَخُ وَ يُصَفَّى عَنْهُ الْمَاءُ فَقَالَ كَذَلِكَ هُوَ سَوَاءً إِذَا أُدَّتِ الْحَلَاوَةُ إِلَى الْمَاءِ فَصَارَ حُلْواً بِمَنْزِلَةِ الْعَصِيرِ ثُمَّ نَشَّ مِنْ غَيْرِ أَنْ تُصِيبَهُ النَّارُ فَقَدْ حَرُمَ وَ كَذَلِكَ إِذَا أَصَابَتْهُ النَّارُ فَأَغْلَاهُ فَقَدْ فَسَدَ

Zayd Narsi says in his original text: 'Imam Sadiq (peace be upon him) was asked about dried grapes (raisins) that are crumbled and put in a pot with water poured over them, and fire is lit under it. He said: 'Do not eat it until two-thirds of it evaporates and one-third remains, because the fire has reached it!'
I said: 'Dried grapes (raisins) are put into the pot whole (without crumbling), water is poured over them and they are cooked, and then the water is strained. (What about this?)' He said: 'This is also the same! When the sweetness is transferred to the water and it becomes like sweet juice, and then (over time) it starts to boil and ferment without being exposed to the heat of the fire, it has certainly become forbidden, and also when fire and heat reach it and cause it to boil and ferment, it has certainly become corrupted (i.e., forbidden)!'
5 عَنْ صَفْوَانَ الْجَمَّالِ قَالَ: كُنْتُ مُبْتَلًى بِالنَّبِيذِ مُعْجَباً بِهِ فَقُلْتُ لِأَبِي عَبْدِ اللَّه أَصِفُ لَكَ النَّبِيذَ فَقَالَ بَلْ أَنَا أَصِفُهُ لَكَ قَالَ رَسُولُ اللَّهِ كُلُّ مُسْكِرٍ حَرَامٌ وَ مَا أَسْكَرَ كَثِيرُهُ فَقَلِيلُهُ حَرَامٌ فَقُلْتُ لَهُ هَذَا نَبِيذُ السِّقَايَةِ بِفِنَاءِ الْكَعْبَةِ- فَقَالَ لَيْسَ هَكَذَا كَانَتِ السِّقَايَةُ إِنَّمَا السِّقَايَةُ زَمْزَمُ- أَ فَتَدْرِي مَنْ أَوَّلَ مَنْ غَيَّرَهَا قُلْتُ لَا قَالَ الْعَبَّاسُ بْنُ عَبْدِ الْمُطَّلِبِ كَانَتْ لَهُ حَبَلَةٌ أَفَتَدْرِي مَا الْحَبَلَةُ قُلْتُ لَا قَالَ الْكَرْمُ فَكَانَ يُنْقِعُ الزَّبِيبَ غُدْوَةً وَ يَشْرَبُونَهُ بِالْعَشِيِّ وَ يُنْقِعُهُ بِالْعَشِيِّ وَ يَشْرَبُونَهُ من الغد يُرِيدُ بِهِ أَنْ يَكْسِرَ غِلَظَ الْمَاءِ عَلَى النَّاسِ وَ أَنَّ هَؤُلَاءِ قَدْ تَعَدَّوْا فَلَا تَقْرَبْهُ وَ لَا تَشْرَبْهُ.

Safwan al-Jamal said: 'I was addicted to nabidh and I liked it! So I said to Imam Sadiq (peace be upon him): 'I will describe it to you!' The Imam said: 'Rather, I will describe it to you: The Messenger of Allah (peace be upon him and his family) said: 'Every intoxicant is forbidden, and that which is intoxicating in large quantities, a small quantity of it is also forbidden!'
I said: 'This is the same nabidh and the drink of Saqaya at the Kaaba!' He said: 'Saqaya was not like that. Saqaya is Zamzam.'
Do you know who was the first to change it? I said: 'No!' He said: 'Abbas ibn Abd al-Muttalib, who had a habala. Do you know what a habala is?' I said: 'No!' He said: 'Grapes. In the morning, he would throw dried grapes (raisins) into water, and they would drink it at the end of the day (or the beginning of the night), and at night, he would throw it in, and they would drink it the next day. His intention was to break the heaviness and thickness of the water for the people, and indeed, they have exceeded this limit (i.e., throwing it in at night and drinking it the next day or throwing it in the morning and drinking it that same night), so do not get close to it and do not drink it!'
6 عَنْ أَبِي بَصِيرٍ قَالَ: سَأَلْتُ أَبَا جَعْفَرٍ عَنْ نَبِيذِ السِّقَايَةِ فَقَالَ يَا أَبَا مُحَمَّدٍ كَانُوا يَوْمَئِذٍ أَشَدَّ جَهْداً مِنْ أَنْ يَكُونَ لَهُمْ زَبِيبٌ يَنْبِذُونَهُ إِنَّمَا السِّقَايَةُ زَمْزَمُ

Abu Basir said: 'I asked Imam Sadiq (peace be upon him) about the nabidh of Saqaya.' The Imam said: 'Their hardship (of livelihood) was greater than having dried grapes (raisins) (to be able to make nabidh), indeed Saqaya is Zamzam!'
✅The above narrative evidences and others show that, in addition to grape juice, the juice of dried grapes and raisins also becomes forbidden if it is boiled or left until it ferments. If it is boiled in water, it must be boiled until two-thirds of it evaporates and one-third remains. Therefore, its use in food must be such that either its water does not boil, or if it does, two-thirds of its water must evaporate.
✅It is astonishing that despite various narrative evidences, some, by adhering to the general principle of lawfulness, believe that raisins and dried grapes are lawful if they are boiled and do not require the 'two-thirds' rule, and it seems that these narrations do not even create a semblance of doubt for them, and they put their followers in a state of lawfulness regarding its consumption!
✅Raisins that are placed in dough and the doughs are baked to become cakes are not subject to the above narrations and are not forbidden, because the raisins are not placed in water for their sweetness to transfer to the water and for its boiling to cause it to become forbidden and require the 'two-thirds' rule.
